The numbers are staggering. In the 1920s, it took a chicken 112 days to reach a market weight of 2.5 pounds. Today, that same process takes just 47 days, with the average chicken reaching 5.03 pounds. This rapid growth has come at a price, as the chickens’ bodies struggle to keep up with the demand.

As the chickens grow faster and bigger, their meat is becoming increasingly abnormal and unpalatable. The “woody breast” phenomenon is just one example of the unsettling changes happening to our poultry. The poultry industry, however, sees things differently. They argue that it’s consumer demand that’s driving these changes, as people crave more and more chicken products, such as nuggets, wings, and sandwiches. “What people don’t realize is that it’s consumer demand that’s forcing the industry to adjust,” says Dr. Michael Lilburn, a professor at Ohio State University’s Poultry Research Center.
